Spicy grilled Sea Bass with Tomato & Fresh Basil Salsa

This is a real simple, quick but impressive recipes.

For those who hate oily fishes or those that have a stonger state, seabass is the perfect fish and perfect way to keep up with your omega 3 vitamins.

The flavours involved in this dish make it very easy to pair with a variety of side dishes. You can enjoy it with some brown nice, pasta, sweet potatoes/ potatoes or a simple salad.

As per the below picture I paired mine with some sweet potato mash


Ingredients

  • 3-4 Seabass fillets

  • 2cm of root ginger

  • 0.5tsp salt

  • 0.5tsp chilli flakes

  • 2tsp fish sauce

  • 2tsp olive oil

  • 2 Garlic Cloves

Tomato & Basil Salsa:

  • 150g Fresh Cherry Tomato

  • Handful of fresh basil

  • 3-4 Tablespoons of extra virgin olive oil

  • 1 Clove of garlic

  • Pinch of salt & pepper


Preparation

  1. Begin by seasoning the sea bass fillets with salt & pepper.

  2. Finely grate the ginger and crush the garlic cloves onto the fillets. Continue by adding the chilli flakes, olive oil and fish sauce then massage well into the filled and then place onto a baking tray.

  3. Grill the fillets for 5 minutes on each side.

  4. Whole the fish fillets are in the oven, finely chop your basil leaves and place into a small dip or mixing bowl.

  5. Add 3 tablespoons of extra virgin olive oil to the basil, add 1 crushed garlic clove and chopped cherry tomatoes.

  6. Mix well then season with salt and pepper as desired.

  7. Remove the sea bass from the oven and add a few teaspoons of the tomato basil salsa and serve with your choice of side. I paired mine with mashed sweet potatoes.
